Ecologically Responsible
In order to produce mesquite charcoal in a responsible manner, consistent with conservation of the earth's natural resources and ecosystems, Lazzari Fuel Company utilizes an ecologically responsible method to harvest mesquite wood by pruning and selectively thinning mesquite trees
Lazzari's five mesquite harvesting techniques are: pruning heavy mature branches that are lowest to the ground, pruning branches that are infested with mistletoe, cutting the weakest of a cluster of trees, cutting a percentage of dead standing wood and taking a percentage of dead fallen wood.
Each Lazzari harvesting program is developed by a biologist, who first performs a field study of a given habitat and then prepares a report which dictates what green and/or dead wood will be harvested from each micro - area. As a result of these common sense practices, Lazzari's mesquite harvests are non-detrimental to the mesquite tree, the ecosystem and habitats that surround it.

Hardwood Lump Charcoal
Lazzari Hardwood lump charcoal is made from 100% natural hardwood such as oak. It contains no chemicals, additives or fillers. Hardwood lump charcoal burns cleanly, with a minimum amount of ash and is an excellent fuel for slow cooking over a low heat or hot grilling any type of food. Oak lump charcoal adds a subtle smoky flavor to food, and leftover lumps can be re-lighted and used again. Our hardwood lump charcoal is a popular choice among our customers with kamado cookers and charcoal smokers. Available in sturdy 20 pound and 40 pound bags.

Lazzari Firewood For Cooking
Lazzari cooking woods are sized to about 16 inches long then split 3 inches to 6 inches wide, seasoned and packed clean. This is the preferred size for pizza ovens and restaurant grills. The wood is packaged in either 1.7 cubic feet (approximately 45 pound) bags or as stacked wood on pallets, 1/2 cord per pallet. We have a variety of woods available.
Almond Wood
Is popular for wood ovens. It burns clean and long providing a very high heat. Our Almond wood is an orchard cut hardwood. Harvesting orchard woods is an ecologically friendly substitute for harvesting native hardwoods.
Oak Wood
Is often used for barbecue cooking where a chef wants a heavy smoky flavor. Oak yields high BTU's and its density allows for a slow burning fire. Lazzari's oak is harvested in accordance with government approved programs.
Apple wood
Is popular with gourmet chefs seeking new flavors to match with foods.
Mesquite Wood
Is another high heat fuel. Its unique flavor is well known and popular.

Lazzari Wood Chunks
We sell both HICKORY WOOD CHUNKS (pictured above left) and MESQUITE WOOD CHUNKS (pictured above right) for use in charcoal grills or ovens. Some customers combine wood chunks when grilling with other Lazzari fuels such as our hardwood lump charcoal or charcoal briquets. Other customers use only wood chunks for creating a fire in the grill or oven. Both techniques add the unique flavors of these woods to the foods being cooked. Lazzari Wood Chunks are 100% natural hardwood, there are no chemicals or additives.

We also package and distribute lump charcoal, blacksmithing coal and heating coal to a diverse assortment of businesses, institutions and industries.
Lazzari Fuel Company was founded in 1908 and established itself by delivering heating coal to San Francisco residents. Sales and delivery were made door to door by horse and wagon. Today we still sell coal for home and industrial heating use and our Elkhorn blacksmith coal is available for industrial metal and foundry use.
Lazzari's Elkhorn Blacksmith Coal
(pictured above right) is a high BTU, low ash, low sulfur bituminous blacksmith coal from the Elkhorn mine in Kentucky. Individual coal pieces range in size from 1/2 inch to 1 inch.
